There is a brand new natural gas to electricity generation plant in Smithton, PA {home of Stoneys beer, the worst tasting beer in the world}, that makes enough power to handle 980,000 homes.
I've driven past the place and while you can not get too close, from the few number of vehicles in the parking lot, there are not a large number of workers on site. There are probably way more than 3 people on site, but it is not in the hundreds.
I'd forgotten about that one, but a quick check informed me that they're really going to do it. If they think power is expensive now...

One of the units just completed its last refueling outage. I assume that next refueling outage for the other one will be its last.
I’m not certain if your speaking of current modern coal fired power plants, but even larger than average sized, there are not anywhere near 600 full time employees to operate. Most are not even ten percent of that figure, and that includes operators, maintenance and office personnel.
Power plants are just like oil refineries, petrochemical plants, compressor stations, pipelines and terminals, they have modernized a long time ago and are operated lean, very lean.
