VIDEO: Air Fried Cajun Turkey Wings

Turkey wings can be quite tough if you don't take steps to soften the meat. In this video I show how easy it is to tenderize turkey wings via dry brining and air frying. Take those steps and add the right spices and the result is INCREDIBLE air fried Cajun turkey wings.

Recipe for 2 wings (4 wing sections):

Brining: One tablespoon Kosher salt and one teaspoon brown sugar.

Marinade: 2 tablespoons olive oil, 1 teaspoon sea salt, 1/2 teaspoon crush peppercorns, 2 tablespoons Cajun seasoning, 1 tablespoon Smoked Paprika, 1 teaspoon garlic powder.

Not cooking them up today because I am waaaay too busy cooking other Thanksgiving stuff. TWO turkeys. One smoked and one sous vide. Also a yuuuuuge pot of turkey soup made from normally unused turkey parts like the center carcass of the sous vide turkey that I carved into quarters as well as gizzards, necks, etc.. So everybody here will be turkeyed out and probably too stuffed to also eat cajun air fried turkey wings.

Great! Most people are put off by the toughness of turkey wings but when you dry brine them and air fry to 185+ degrees they are very tender. Glad you enjoy the DUmmie FUnnies!

This year I browned 4 pounds of wings and 2 Costco rotisserie chicken carcasses and threw them into the slow cooker for 24 hours, strained it and cooked it down to about 2 cups of poultry demi-glacé that I plan to serve with my bird tonight!

WOW! I made both the BEST and the STRONGEST Margaritas for my Thanksgiving dinner. The BEST because I was using the BEST liqueur in the world, namely Curacao Blue PLUS I made the Margarita mix myself using sugar, water, and fresh squeezed limes. And the STRONGEST because I wanted to finish off the half bottle of the Curacao Blue I had for the two pitchers I made when it could easily have been used in four pitchers and also because I used about double the amount of Tequila recommended.

After just a couple of Margaritas I was already getting hammered and by a couple more after that I was flat out plastered. My wife was also out of it. The other guests seeing what happened to us, limited themselves to one glass or less of the Margaritas.

Since I was using good liquor I felt NO HANGOVER or other ill effects when I woke up this morning. But, WOW, those Margaritas were STROOOOOOOONG!!!

And then the Indians came to the Pilgrims with ice and tequila and lime and blenders which allowed the Pilgrims to relax and watch giant bags filled with gas being towed along a path who weren’t even Joy Behar.
