I got a laugh from some older black guys who were talking about “caucasions” and i said we prefer being called white.

Absolutely. Unless or until the buffalo come back and we can roast their ribs beside an open fire like the Indians, the best food native to these shores is a mix of white folks’ leavings and African ingenuity. They should, most do, take pride.

I used to work for the Burlington Northern Railway in the Fort Worth dispatcher office as a Signal and Telecom electronic technician. One day my supervisor said we had a project to go to the CEO (Walter Drexel) home on Curzon Ave and install a entertainment sound system. We were there three days and I was working with contractors wiring the house and installing volume controls in the living areas.

As I was finishing up (I was the last worker in the house), Mrs. Drexel was in the kitchen cutting a cantaloupe with a lady who was there involved with some redecoration. Before I had a chance to leave, she came into the room and said,
“We would invite you to stay for lunch, but we don’t have anything you would like.”

Love, love, LOVE collards as long as they are not ruined by chopping prior to cooking.

I separate leaves from stems & cook leaves whole which keeps the natural flavor Put in large pot with water. Maybe a slice of bacon- days of fatback are a memory. Cook down, cover & simmer until tender.

Serve with a bottle of apple cider vinegar on the table & good to go!

So true. If incompetent they are hard to fire. Whites and others not so much. Try having a team of 4 with one incompetent minority on it. The other 3 end up having to do more work, moral suffers and then some leave. End up with 2 left, one which is incompetent.

Rinse and repeat. Try to explain that to a customer or the team.

Reading about it in stories of the Plains Indians' lives and thinking of how outrageously good the equivalent was in gaucho fire roasted full size beef ribs in Argentina, it sounded pretty substantial to me too. The Indians might go hungry sometimes, but when they feasted they were known to feast well.

Like turnip greens? My mom and the rest of my family loved them. I do not know why I don't, since I love turnips and greens with a little bit of pepper sauce and cornbread. There is not much food I do not like. I love all fruit except for mangos. Do not know why I do not like them either. There are a few restaurants here that cook good ole southern food. They are always busy.

The Army hospital at which I work has a yearly African American heritage observance. The menu in the cafeteria on that day? Fried chicken, BBQ ribs, corn bread, collards, black-eyed peas.
