Weekly Cooking Thread - January 28, 2017

Hi to all! This is the weekly cooking thread for this weekend, and I am one of the substitutes for Jamestown1630. I'm sorry I didn't start yesterday, but, well, how do I say this?? I forgot. And I am sorry. But here we are.

What is going on in your kitchens this week? There are a lot of sports on TV this weekend so I decided to make a bunch of fried chicken, great to eat right out of the fryer, but also good cold. I bought a bunch of winglets and some drumsticks.

I took a glass 13x9 pan, and mixed a cup of flour, a cup of water, 2 eggs, salt, pepper in it. It's goopy which sticks really well. Then in a big ziplock bag, I put 2.5 c flour, more salt and pepper, 2 tbsp garlic powder, 2 tbsp smoked paprika.

Heated up my deep fryer. You can use a heavy pan with oil in it too. Dipped my chicken into the goop, then into the flour bag, then in batches into the fryer.

I love using brown paper grocery bags for post-frying. They soak up better than anything. More salt over the chicken and there you go. The guys motored a lot of them up, but some is left For tomorrow's NHL Allstars game.

Oh, for those of you still doing wonderfully on your purely healthy new year eating plan, just skip the above, LOL.

2 lbs boneless beef
1 can black beans (8 oz)
1 can mild diced green chilies (2 oz)
1 box frozen spinach (8 oz)
4 carrots
1 large onion
2 medium potatoes
1 yam or a medium sized taro root
One package Golden Curry sauce mix (Available at a Chinese grocery store)your choice mild medium or hot

Thaw the spinach
Dice the potatoes, yam, carrots and onion into pieces all of about the same size

Saute the veg in a light oil.
When nearly done add the diced chilies and and black beans

Brown the beef in a separate pan - season with a small amount of soy sauce

Combine the beef and vegetables at the same time you add the chilies and stir for a minute or so.

Add the curry sauce mix and add water to get the gravy as thick or thin as you want.

Serve over brown rice

Steaks with mushrooms, salads, and mustard parmesan potatoes.
The potatoes are delicious. Cut small yellow potatoes in half, dip cut side in Dijon mustard, then in grated parmesan cheese. Place cut side down on parchment covered baking sheet and drizzle with olive oil. Bake 20 minutes at 425F. Miniature potatoes 2-3 inches work best for this recipe. You can also use different mustards according to your preference.

I can make the sauce from scratch but really, why bother? The pack of Golden Curry sauce mix is a lot easier and just as good.

For those that don’t know Golden Curry is a brand that makes a Japanese style curry sauce.

The recipe listed above is sort of a mix cuisine with elements that are Caribbean and South Asian as well as Japanese.

Red or green Thai curry in coconut milk?

Not so much,but still tasty

RIBS lol The Ribs were on sale. So I cooked some and freezing the rest until Puppy Bowl Sunday along with my wings. I do not fry my wings but oven bake them on a rack’ spray some oil on them and bake at 400 for 1 hour and a half until crispy. Meanwhile, prepare mix on side - 1 Tbsp of Worshire Sauce, 2 Cups of Tabasco; 2 Tbsp of Butter - heat and melt them together. When wings are ready, dip in sauce and let it sit for a minute then remove and place in dish. I am considering getting an Air Fryer.

Sadly, I can’t eat catfish. Can’t even eat real bacon, but turkey bacon really works well here.

Someone was nagging me to get an air fryer and not to use my deep fryer. But I wanted a deep fryer for years and the skinny boys 2 men here love that stuff. I know it would be healthier...

How do you do your ribs? I have a cheating ribs recipe. Mind you, we only cook beef ribs here but still. Ribs are still ribs.

My cheat cheat for them is to buy as many as fit in a pile in my slow cooker. Add some commercial BBQ sauce (I like Stubbs for this) and cook on high for about 4 hours. Not much longer. You do not want the meat falling off the bone. You want to lightly chew it off! Then arrange on baking or broiler pans and put them High under the baking thing or under a broiler in an oven - for only a few minutes until they char ever so slightly. Add more sauce.

Are they as spectacular as properly smoked ribs? Heck no. Will they do? Oh yes.

But I found a rib place not far from here and brought a mess of them home recently in a rainstorm (yay rain), and they were almost too good to make them myself ever. They didn’t even need BBQ sauce. They were perfect. And yet the place made the worst cole slaw we all ever tasted. It was mushy with zero bite, zero acidity. They should have been knighted for the ribs but shot in the kneecaps for that cole slaw. Oh well.

The mustard part forms a crispy crust on the cut surface of the potato. You can also salt and pepper them after you drizzle the olive oil. We don’t think they need it, but you might.

As for the Ribs, since I live alone I cut the ribs in slices and put the rest away in the Freezer. I then cook my ribs by first boiling them. Once the meat is tender I take them out and place them on the rack and I don’t do my own sauce but I spread Kraft Hickory Smoke BBQ and leave it for half hour and then turn and spread sauce on the other side for half hour and then remove from oven and enjoy.

We like this recipe.............. Party Magnet From Vivian Howard’s Deep Run Roots: Stories and Recipes from My Corner of the South Makes 1 large cheese ball or 2 small ones Ingredients ¼ cup high-quality blue cheese (I like Maytag) ⅓ cup (5½ tablespoons) butter ¼ cup fresh goat cheese ¼ cup plus 2 tablespoons cream cheese ¼ cup chopped dates 2 tablespoons finely chopped scallions (both white and green parts work here) ½ teaspoon hot sauce ¼ teaspoon salt ⅓ cup Salt-and-Butter-Roasted Pecans (recipe below), roughly chopped 2 tablespoons chopped flat-leaf parsley Preparation Take the blue cheese, butter, goat cheese, and cream cheese out of the refrigerator to soften 30 minutes before making your cheese-ball mixture. In the bowl of a mixer fitted with the paddle attachment, combine all the ingredients except for the pecans and parsley. Paddle it up till homogenous. It will be loose and sticky and you’ll wonder how you’re ever going to form that mess into a ball. The answer is, you transfer the bowl to the refrigerator for 15 minutes or so. During that time the cheese mix will firm up enough for you to pat it into a sphere. Once it’s stiff enough to hold up, form the ball and roll that ball in the pecans, followed by parsley. Salt-and-Butter-Roasted Pecans Makes 2 cups Ingredients 2 cups pecan halves or pieces 2 tablespoons melted butter ¾ teaspoon salt, divided Preparation Preheat your oven to 350ºF. Toss the pecans thoroughly with the melted butter and ½ teaspoon of the salt. Spread them out in a single layer on a baking sheet and slide that sheet onto the middle rack of your oven. Roast the pecans for 11 minutes if using whole pecans and 10 minutes if you're using pieces. Bring the slightly darkened and toasty-smelling pecans out of the oven and hit them with the remaining salt. Let them cool 5 minutes before you eat them. These will keep for 7 days in an airtight container at room temperature.

I am not cooking this week. Too much other stuff to do. We picked up fried chicken and fried fish from the deli along with sides, salad makings, fresh veggies for dipping, and lunch meat for sandwiches.

I am hoping for some good sales next week and will can some meat or chicken. Great time saver and way to store food without refrigerator, and so easy to do. Just heat and eat - instant roast beef, chicken, or pork.

May do some crockpot chili later in the week. I like to do crock pot dishes for tv events too. Keeps stuff ready to go for seconds and for TV marathons.

My favorite is to order pizza delivery, wings, and dessert, but that’s too expensive to do often, and no longer fits my low carb diet requirements.
