We made green curry. Not for sports but just because!

2 lbs boneless beef
1 can black beans (8 oz)
1 can mild diced green chilies (2 oz)
1 box frozen spinach (8 oz)
4 carrots
1 large onion
2 medium potatoes
1 yam or a medium sized taro root
One package Golden Curry sauce mix (Available at a Chinese grocery store)your choice mild medium or hot

Thaw the spinach
Dice the potatoes, yam, carrots and onion into pieces all of about the same size

Saute the veg in a light oil.
When nearly done add the diced chilies and and black beans

Brown the beef in a separate pan - season with a small amount of soy sauce

Combine the beef and vegetables at the same time you add the chilies and stir for a minute or so.

Add the curry sauce mix and add water to get the gravy as thick or thin as you want.

Serve over brown rice
