Now that Free Republic is up again - and that's a darn good thing - what size eggs should I buy?

I am convinced Jumbo are the best value. For just a few cents more you get one egg that is the size (volume) as two large eggs.

I like them semi-scrambled. Crack into skillet. Smoosh the yolk around until a good even white/yolk ratio. Turn over until cooked to your liking.

As far a boiled I’d love to figure out how to end up with not soft but not hard either. With the yolk color yellow mixing to orange. That’s my ideal. But I will eat them hard or soft boiled.

In the store eggs have a weight on the doz pkg. Do some math, and find out which size is the best price. These days eggs have been priced very reasonably because of over-supply.

Our choice though is to buy eggs in Amish country, and large brown eggs are preferred. We go for free-range. The best. These currently are $1.50 per doz.

Just a note on cholesterol...it is not a disease. The drug companies and the doctors want us all on statin drugs...pure poison. Statins cause stroke and heart attacks.

Statins cause the liver to stop producing cholesterol. Every cell in our body needs cholesterol. Especially the brain. Statins can cause dementia like symptoms.

The less cooked egg is the best for us, health wise. And the yoke is better for us than the whites. An egg smoothie, made in the blender by putting a raw egg in, turning it on, adding a couple tablespoons of coconut oil dribbled in slowly, than adding fruit or whatever you want in the smoothie for flavor, is very healthy. Use your imagination!

We will soft boil eggs and clean the egg out of the shell into a dish, add butter, salt (Himalayan) and pepper to taste. Might drizzle some hot sauce on the eggs.

Do larger eggs have significantly thicker shells? It would be interesting to see the total weight minus the shells.

If it matters, Jumbo eggs are usually quite a bit cheaper by the pound than large eggs.

I am not so good at soft-boiled,

Foolproof method.

1/2" water in pan, Bring to boil.
Add eggs, 2,4,6 doesn't matter , right out of fridg.
Cover and Steam 3 1/4 to 31/2 min.(I do 3 1/4)
run cold water over eggs to stop cooking.

Whenever I boil up a pot of pasta I put 2 or 3 eggs in the pot for some hard boiled later.

When I finish a jar of pickles (big jar from Costco), I “boil” up a batch of eggs in the steamer (30 minutes), cool & peel and put them in the pickle juice.

What you HAVE to do though, is always use clean sterile utensils when removing pickles to avoid contamination of the juice. Thoroughly boiling the pickle juice also might be a good idea before introducing the eggs into the brine.

bring water to boil, gently lay a room temp egg into the now boiling water. Cook for 3 minutes.

Wa-la... the “3 minute” egg!

They used to do that in the bar I hung out in. They had sausages in a jar and when they sold all the sausages in would go the eggs. That is where my dislike of them came from.

Use large or extra large size eggs at room temp eggs with a timer. 3 1/2ish minutes for soft boiled without slime. I get serious about some things. Always food related.

Love over easy with ketchup. Scrambled with smoked salmon and hollandaise and a shot of lemon and chives

America’s test kitchen has perfect soft boiled eggs, using large eggs only. Bring 1/2 INCH water to boil. Using tongs or a spoon, gently place whatever number of eggs you want into the pan. Cover, and boil for EXACTLY 6 1/2 minutes. Make sure they boil and have a tight fitting lid, because it is the steam that cooks them. Set the temperature so they boil, but doesn’t have to be on high. When done, rinse with cold water, til can be handled without burning your fingers. Works like magic, EVERY TIME.

My ol Doc used to lecture me when he found out that I ate so many eggs a day, breakfast 6 or 8, supper a 6 egg omelet (beer is what’s for lunch) now we just agree to disagree but he does admit that I was right about 10 years ago about eggs

I always buy the JUMBO eggs.

And usually eat three to five a day, occasionally more.

Eggs are, contrary to popular belief, the single most-digestible-protein on the planet, loaded with vitamins and rare earths, and it is easy to see why.

There is a living, breathing chicken on your plate!

Don’t worry about the cholesterol. Eggs are loaded with lecithins and emulsifiers.

Chow down!!!!
