Oxaloacetate is required to metabolize fat.
In a water-fasting individual, oxaloacetate would come from two sources:
1. Glycogen (carbohydrate)
2. Protein
What would the source of protein be in an individual who has depleted their glycogen stores?

Glycogen is produced from muscle tissue as well. You don’t need to consume carbs to live.

Not correct. The body has a set limit of how much fat it can consume in a given time period. If you’re expending calories at a rate greater than that then you will be consuming muscle mass. However, muscle is one of the easiest things for your body to rebuild and it does rebuild it daily, as long as you get enough protein.
There’s been a bunch of studied cases of people who lost weight by not eating at all 6+ months. As long as you get electrolytes and vitamins it’s safe. If you don’t, then you will screw your organs up. I wouldn’t do it long term without working with a doctor.
Honestly, if you want to lose weight quickly there are 2 pretty good options: Intermediate fasting (only consume food in 1 or 2 meals a day, no snacking) and a low carb diet like Keto.
