Well we didn’t have stewards mates when I was in and I damn well never saw or had any of the mess attendants doing any of this for us - we were lucky to get them to keep the mess accounts correct and actually get our meals on time. Coffee ended up being the JO’s responsibilities on my FFG just because the mess was always - ALWAYS out. XO had enough and assigned it to the Bull .... and despite popular thoughts otherwise he actually apportioned it to all the ensigns on a schedule tied to the watch schedule.
Carrier was the same. Nothing was done for us in our quarters. I’m sure the COs and admirals were different with their assigned staff, but I know my CO on the FFG didn’t have anyone to do this stuff for him..,, then again he was almost as paranoid as Captain Queeg was about his darned strawberries.

Stewards Mates in WWII were mostly Black while the Philipinos ‘took over’ when the rates opened up to ALL.
Most of the Philipinos went into Supply & Disbursing or Admin rates...would imagine getting a clearance was a problem for the Native Philipinos.- not sure if they had to serve as Stewards at first or not.
