smaller turkeys have a lot less calories than the big artificially plumped birds.

No they are not “fat like that” because they are penned up.. they are bred to be that rediculously large. Selective breeding has produced turkeys so rediculously large breasted they can’t even reproduce naturally...

While you are free to criticize the industrial farming of chickens, they aren’t fat like that because they are penned. They are fat like that because they are genetic freaks bred to be that way.

“[G]rowing guilt over wasteful leftovers,” Ha! The leftovers are usually the best part of the whole weekend. So many good things can be made from them. Even though single, I still prefer a 12 - 14 lb. bird because of the great leftovers.

Leftovers, especially turkey sandwiches with cranberry sauce mayo and stuffing, and making Turkey Soup from the carcass are what it’s all about in MY family. :)

To heck with turkey. Bone in shank ham is what I am serving. I love the leftovers a lot more - split pea soup, scalloped ham and potatoes, etc. No tiny turkey for us!
