The obesity epidemic is caused by sugars and high carb starches like french fries, not meat. I am a high meat/low-carb diet, and have lost five pounds in the first week.

Of course technology companies like Impossible foods are trying to make a decent meat substitute, but I believe the concept of freedom should prevail. That means we get to decide what to consume, and the market gets to decide how much it costs.

A tax? Well, consider the whole world and figure out how to do it? I personally think this will not go down well.
