The one that looks awful to me is the Alabama mayonnaise based “BBQ sauce”.

Actually it has to be pork to be real.

That doesn’t mean that chicken and beef cannot be good, they are just not real BBQ.

Never tried it but I did try Vinegar and that’s just about what it was, Vinegar and brother it really soaks into the meat.

I used to eat at a great one in Dothan, AL. It has gone down so I won’t mention it’s name.

They cooked it over a very large pit. I don’t think they put anything on it while it cooked but I could be wrong. They had maybe 5 different sauces on each table.

My favorite was sort of a combo of cole slaw and relish.

One might well posit that since barbecue traveled from east to west, all other styles and meats are mere interloper pretenders, johnny-come-latelys and wannabees.

Lets clink glasses and toast the noble meats, whatever they are...

I found a really good rub for Ribs, Beef, and Pork. I used to make my own and it took a lot of time.

You just can’t over do it. Hasty Bake regular rub.

You don’t need much if any sauce.

One of the best BBQ places I ever went to believe it or not was in New Jersey. It was a small place in a rough area with an owner who was a true southerner and extremely proud of his craft.

I just love chicken thighs cooked on the grill with barbeque sauce. And I love the smell of grilling chicken, in the neighborhood. Sadly, don’t have this very often, as my husband only likes chicken breasts, and is not a fan of grilling them.
