Italian beef was once Chicago’s little secret, a result of Italian immigrant innovation, this sandwich was enjoyed with pride. It was highly customizable — get sweet peppers or submerge the French roll in jus. Newer variations allow for melted cheese. The Buona chain even recently began selling a meat-free version.
But, of course, The Bear has shined a spotlight on the sandwich, and chefs around the country have started to create their own versions hoping to catch lightning in a bottle. Season 2 of the FX show will move away from the sandwich and chocolate cake

Prolly because french bread soaks up the peppers and au jus better than italian bread.

Nope. Ever since Dick Portillo sold off the chain, the new owner changed the beef, the recipe, the bread and the portion size.
Portillo's absolutely SUCKS. Real Chicago Italian Beef lovers go to Buona Beef. Still family owned, still local to Chicago (expanding to Arizona later this year) and still freaking awesome.
I had one at Portillo's in Phoenix last year and it was just as good as I remember them in Chicago.
That my favorite Chicago food. Buona is very good, but there are plenty of mom-and-pop places that can serve up a respectable beef. When I first came to Chicago, a friend took me for my first Italian beef at a hole in the wall on Grand Ave. It literally had a hole in the wall, but the beef was good.
I just want to know if Adam’s Ribs is still in Chicago?
I order from Serelli Street online about once a year as a special treat. Best I’ve ever had.
