We always grated the potatoes instead of shredding them.

We grated the potatoes, drained off as much of the liquid as possible then added an egg or two, salt, and a little flour to thicken the mixture, then fried them.

We always grated them as well. My grandmother n\made them, with some onion added. fried crispy brown. My late Grandfather always said he would grate potatoes all day if my Grandma would make potato pancakes with them. :)
