I eat one meal a day. Usually a big steak with a lot of greens and mushrooms. I eat my steak medium rare and it’s easy and fast to cook on my cast iron skillets. I use butter to grease the pan. And it’s cheaper and satisfies me better than McDonald’s!

Even pan fried (I know, blasphemous!) is delicious. Had one last night. Rubbed it with garlic, salt, and pepper the day before, let it sit out for a few hours before cooking, and wow. Delicious. Some Swiss chard, a potato, and a glass of cheap red wine, and I was eating like a King.

We eat beef 3-4 times per week. When I was younger I used to eat steak 4 nights a week.

I don’t do it, but I sure am impressed with people who do. Seems like it could be a hobby that later could prove to be life saving. (Who knows what the future holds?)

When my parents retired to Mom’s family homestead in 1996, they were faced with putting the basement “in order”. The place was built in 1830, so there was a lot of stuff.

There were shelves full of jars of veggies canned by Grandma. Mom wanted to use the jars for her own canning so they threw out the food. Mom said it looked and smelled perfectly fine, even though Grandma died in 1948.

The low fat diet fad began the decline in beef consumption. Fatty meat was cast as the villain in the heart/metabolic disease battle and pretty much everything after that mistake has made metabolic diseases worse. Families buying meat today are children of this mistake.

Type 2 Diabetes was almost unheard of before "low fat" diets became all the rage.

There is something wrong with the food in America. I know many Freepers grow or raise their own but this is an exception. For most it has become bland. The supermarket steaks, even the premium ones aren’t that good.

I had a real eye opener when I moved to Australia. I never knew eggs had so much flavour. Meats also so much better. Not sure what is wrong with the food in America, but I know Americans deserve better. Maybe it’s the antibiotics or just the extreme corporate farming/ranching. I really don’t know. I just pop into the local Costco and the locally raised meats and animal products just taste so much better. Maybe similar to the 1970s in America (I was just a kid then so I may be mistaken).

Each trip back leads to a new disappointment in food quality. Even the fast food here by the restaurants I try to avoid is better. I’ve got kids so McDonald’s occasionally happens. It still sucks but it is definitely better quality. Trying beef in America is just not worth the price for the quality. It is slightly more expensive here but worth every cent. The chicken is also phenomenally better, pork is definitely better and the lamb is fantastic enough to give beef a run for its money.

Yes we all got taught that chicken was better for our health in the late 70s through the 90s and that altered our eating habits even here in Australia. I prefer beef and lamb and am doing my part to support those industries. Unfortunately my wife prefers mobile veggies (chicken). My friends that I trust are recommending some wholesale butchers that are supposed to be even better. I’m actually afraid of finding beef that tastes even better. My love for America will sadden even more as I realise how much all of you have lost.

Maybe part of the restoration of America can be started by getting back the quality food you have lost.

There is only one animal that worldwide has no religious restrictions against eating it. It’s lamb. Something I learned at trivia.

And lamb used to be really affordable but these days it's gotten quite pricey and it all seems to be imported from New Zealand.

I love lamb chops seared on my cast iron pan.

I still remember BBQ leg of lamb in the dead of winter with a heavy snow storm happening. My Antiochian Orthodox priest and his family appreciated it.
