There are a variety of hybrid and GM corns out there that should be able to live in former agave fields and then walk to market.
If there aren't, there will be!

Agave grows in some pretty crappy and dry soil....but tends to walk away on its own as people choose to make their own tequila or sell someone else’s plants at market. Theft has been the biggest problem that I have seen.

Reading through the literature on Agave I was surprised to find that such a large part of the total product is derived from "wild" agave plants.
There's little on growing it other than pulling the spikes, soaking them until they root, and then planting them in open sandy soil somewhere else.
Other than the fact they are described as succulents, which suggests they thrive under dry conditions, they are also part of the lily family, which has member species that grow under almost every conceivable condition.
Maybe the need is for a GM blue agave plant that thrives on bare rock in the far North. Canada has a lot of that stuff!
