I haven't been following the Catalan crisis all that closely, so I'd like to know what Catalonia's beef is with Madrid. I do know that Catalan Spanish is slightly different from Castilian Spanish, but other than that...

What you wrote is totally wrong. Catalonia is the most leftist part of Spain. They want more muslims and complain that the Spain won’t let them.

I was reading a cook book from the 1960’s about the cuisines of the different regions of Spain. What you say is correct.
They have a long history of productivity, enterprise, and, a culture , and political Independence quite different from the rest of Spain. I think that the geography of Catalonia has enforced that.
I think in Americanese, it would be, “Just leave us the hell alone.”

Communists vs. Socialists. Barcelona was the communist capital of Spain from 1937 until it was liberated in early 1939. They’ve remained a center of left wing activism.
During the Spanish Civil War, Catalonia was an important region for the Anarchist forces. So, the region was not primarily Fascist, nor was it primarily Stalinist.
Spanish Anarchism is fairly Left-wing (not all types of Anarchism are on the Left) so American Conservatives would not really approve of Spanish Anarchists, but still the Anarchist approach is that government is not your friend, The Powers That Be are your enemy, and life would be better if other people could just leave you alone to live your life.
Catalonia has been trying to break away from the central government in Madrid for a very long time.
I watched a YouTube video on the history of Spain back before it was Spain and Portugal and it looks like the Catalans lost their independence when Ferdinand and Isabella married to consolidate power and isabella outlived him. There were 5 parts of the Iberian Peninsula and Portugal became one of them. Ferdinand and Isabella ruled over the two most powerful territories and the marriage started the movement towards what we now know as Spain.
I also think that there is a similar issue to Italy where the North in Italy thinks its subsidizing the South too much economically while in Spain Barcelona thinks it’s subsidizing other parts too much.
The Catalans have elected to have this Muslim immigration, which is much higher than the rest of Spain, because they think it P.O.s the rest of Spain (which it does) and they have the highest percentage of Muslims in Spain. They want to be directly under the bloated bureaucracy of the EU, and as for Spain, about all the Catalans do now is accept money from Madrid and otherwise they operate with a level of autonomy that would be unthinkable for a US state. They have a huge civil servant population - some enormous percentage of Catalans work for the government - and a 70,000 member autonomous police force. Their civil servants are the highest paid in Spain and a huge amount of their budget goes to support their bureaucracy. They enforce Catalan-only policies very ruthlessly and violate the Spanish constitution in just about every way possible. They are relentlessly anti-Christian and anti-Jewish (pro-“Palestinian”), have a “feminist” wing that would make your hair stand on end, and “LGBTQ” activity and laws that persecute anyone who doesn’t want to get with the program.
Catalanism is the pet project of the radical left (the party to which Puigdemont belongs was one founded on the ruins of a former leftist party that wasn’t considered radical enough) and by a fluke, because of their parliamentary system, the Catalan government ended up being controlled by the two new-left parties. So suddenly all these positions were on steroids, and Catalonia wants to be a new socialist state practically along the lines of the old Albania. They spent some time right after their declaration of “independence” trying to figure out how to nationalize banks and seize the assets of major industries, which is the reason several thousand companies have fled the region in the last weeks. It was really only the intervention of Madrid that prevented a Venezuela-style seizure of property. Weirdly enough, at the same time the Catalans want to be part of the EU, which they see as a more modern socialist mega-government, and they regard the Spanish government as too conservative, anti-Muslim, etc.
Most Catalans do not want to be part of the new Albania, however, but for a long time were intimidated by the leftist parties (which were quite violent during the faux elections of October). Now they are now beginning to fight back. Personally, I think Puigdemont should be in the slammer for life for having completely destroyed the economy and social compact of Catalonia. it’s going to be a long time before the damage is undone.
The central government of Spain is dangerously close to economic collapse. Catalan does not want to go down with them.
And the economic collapse is closely tied to the massive Muslim immigration. The central government of Spain is slavishly devoted to the lead of Merkel’s Germany, while the Catalonians have a large faction of libertarians.
From what I’ve been able to gather, they are a separate culture and different dialect. When asked where they’re from they reply ‘Catalonia’ not Spain. They are also more productive than the other regions and resent supporting the deadbeats in Madrid.

I see that there seems to be a rather severe discrepancy in the replies to your query. Catalonia appears to be a Libertarian, Communist, Mercantilist, Bureaucratized, Islamic-phile, Islamic-phobe, anti-Fascist, anti-Jew ...
What this does do is to put a lot of Europe’s separation anxiety under the microscope. Catalonia is NOT UNIQUE in desiring independence. Great Britain has already had one vote on Scotland independence and there are almost certainly more to come. Belgium is functionally 2 countries, Walloonia & Flanders, even while it becomes Islamified and the Capital of the EU.
