Venison chews like bubble gum. It can be done right but very difficult to do.
I kill my own, butcher it myself, my venison steaks melt in my mouth. I also hunt amd eatsquirl, rabbit, quail and pheasant. Most types of fish (Michigan). I eat well, healthy and cheap. And have fun doing it.
Roast, grill or pan cooked very quickly with some butter and maybe a dollop of Cabernet or (my fave) some Harvey’s Bristol Cream. A sprinkle of lemon pepper.
Done.
Tender.
Delicious.
It isn’t rocket surgery.
I don’t eat much venison anymore.....my husband can cook it and eat it, since he’s the hunter.ELk is pretty good usually but it can taste gamey if not taken care of ....

If you have venison that is that chewy it wasn’t let hang to tenderize and age. If you cut and freeze a deer without any hang time at all, even a fawn will be like bubble gum.
All meat has to hang for at least 24 hours, any less and it will be too tough to eat. 2 weeks is perfect for aging venison.
