I wish I could find some mayo that didn’t have soy, but tasted the same. Avocado is...not to my liking.

Mayonnaise is just solidified oil with an egg or two in it:

immersion blender mayonnaise
Ingredients
1 large egg
1 cup oil (olive or avocado)
2-3 tsp lemon juice or lime juice [1 tbsp]
generous pinch of salt
low till it starts thickening
5 seconds up and down at the end to finish

Try grapeseed oil, or good olive oil and make your own mayo. It might take some experimentation to find the right flavor. One does not really need avocado oil or grapeseed oil to make mayo - these are usually used for their higher smoke point for frying / Sautéing. Some people like Hellman's or some of the others that have a tangier flavor (not a heavy tang like miracle whip). Me, I prefer (I'll get endlessly flamed for this) Kraft regular mayo as it is less intrusive and doesn't cover up the flavor of what is in the sandwich. There are plenty of options, are you sure you've tried them all?
