Because God in his foreknowledge knew that the Catholics would turn her burial site into an enormous shrine stealing glory from Himself. Therefore, just like Moses, her burial site is unknown.

Her veneration didn’t occur until long after she was dead. She was just another dead person and probably received the usual treatment.
