Tongue was a common food in US up to the 60s. We had it occasionally. Could be tough.

When I was a kid I had beef tongue for dinner, at least once.

Back in the 60s, the supermarket meat counter still had a diagram of the whole steer posted on the wall behind the counter, and "variety meats" were still sold and consumed. We would also have beef liver on occasion.

As a young broke householder in the 70s we had liver blood pudding brains(once) kidneys . No sweetbreads.

:: shudder :: I hate liver. Dad used to love liver and onions and we always seemed to have liver when I was in trouble. :: sigh ::

We had beef liver quite often. I really like it, sauteed with bacon and onions. Never have it now ‘cause Hubby hates it. Also, it’s not very healthy, I’ve been told.
