You say that you hate liver! You're mean old mother made you eat it when you were a kid and all the while you were gowing up. Well you're all grown up now and it's time for a taste treat.

This recipe will convert you from being a liver hater into a liver lover. Simply follow these three rules. It will change your way of thinking about liver. The trick is to soak it in milk -- for at least two hours but more if possible. Also, turn the liver as little as possible, and above all, don't overcook.

What?!? Mixing meat & dairy?

Good thing I’m not Jewish, as this really is good.

However, for a real liver treat, you need a fresh venison liver, lots of butter, and a bottle of white wine.

I’m a liver lover, too. But I only eat calves liver or chicken liver. “Beef” liver has accumulated too many toxins.

And, I can almost never find calf’s liver in less than 1# frozen packages. Too hard to thaw to get half a pound to cook, and leave half a pound to refreeze.

So, I now only eat chicken livers, as I can often get them unfrozen, and divide for freezing in meal sized portions.

I tried the milk thing. No better to me than rinsing well in water, then cooking just like my regular best-in-the-world fried chicken recipe.

Cook 45 minutes? Careful, you will break a tooth. Only one bottle of beer?

If you are going to cook it 45 minutes, you better have a whole beef liver, and cook it slow.

There is a huge difference between calf & beef liver.

Yes, one is only disgusting; the other is totally nauseating. Take your pick which is which.

Don’t roll it in flour. Try tossing it with a few leaves of fresh sage in the skillet.

I was on an "exercise" in Central America back in 1994 and one night for chow...they served liver, which they bought off the local economy. We were in the field...so I am sure there was no soaking in milk...and they fried it on the field kitchen's griddle. It was "well done."

There was almost a riot.

I agree. Squash is poison.

Liver, however, is good.
