What to do with a pheasant?

A pheasant just landed in our parking lot. That bird ain't from around here (Puerto Rico). We first thought it was a turkey or a guinea. It looks injured, but it's a beautiful bird. Any idea what to do with it? Some people are thinking Epiphany Eve dinner...

May be injured. May be sick. I don't think I'd be quick to make it dinner. How about calling a bird sanctuary or wildlife refuge or animal rescue?

Well, pheasant
is finger-licking good but it's not too sporting to pot an injured bird.
Don't you have a bird rescue down there? Let them handle it if the bird needs medical treatment.

Escoffier suggests barding it with thin slices of salt pork fat and roasting at high temp for 25-30 minutes according to the size of the bird. Or, if you have truffles, Faisan Truffe sounds good (recipe 3942).

Some people are thinking Epiphany Eve dinner...One pheasant will serve only one, maybe two if they are not hungry. Look up bird sanctuary in the local phone book and call them.

Salt,pepper,garlic,flour mixed in bowl. egg wash dip, dip in flour mixture-pan fry in butter and olive oil.
Add some garlic-bluecheese mashed taters and veggie of choice
Commence eating

We need an update on the pheasant.
Did you catch it? Did you find a bird rescue or humane society for it? If you killed it, did you remember to hang it for a couple days?
