Revolutionary tip for those who don't like to dry out the breast before the thighs are done:

When readying the turkey in the morning, put it breast down onto a large bag of ice, so the legs and thighs warm up a bit while the breast remains cool. Put a ziploc bag of ice in the cavity against the inside of the breast.

Since you mentioned cheesecake, I'll add a little aside which isn't what you asked for ...

Cheap cheesecake thrill ... Kraft's Philadelphia Brand makes a ready-made cheesecake filling now, which can be found in the same dairy section with the regular cream cheese. Comes in a plastic tub. It's not bad for ready-made - you're supposed to just put it in a graham cracker crust and then garnish however you like.

Dreyer's Ice Cream has a "special limited edition" Pumpkin Ice Cream that they stock for a few weeks this time of year and I really like it. I mixed some with the Philly cheesecake filling and it makes a very easy, quick, luscious Pumpkin Cheesecake.

OK - first I'll steal from STARWISE's post on the Saddam Live Thread:

"... I think I'm going to try this for Thanksgiving .. saw it made on the tube, and it was so easy to make and looked yummy:

Flan

1/3 cup sugar
5 eggs
1 (14 oz.) can sweetened condensed milk
1 can evaporated milk
2 teaspoons vanilla
1 (8 oz.) package cream cheese
2 tablespoons Kahula (optional)

Place sugar in aluminum loaf pan. Hold loaf pan over low heat, moving pan from side to side until sugar is completely melted and golden brown. Swirl to coat sides and bottom evenly with the sugar. Set aside.

Beat eggs and cream cheese well. Add sweetened condensed milk and evaporated milk and beat until blended. Beat in vanilla. Add optional Kahlua if desired.

Pour mixture into aluminum loaf pan and place in a larger pan containing 1" hot water. Bake at 350 degrees 1 hour, or until toothpick inserted in center comes out clean. Cool; then turn over on a serving plate.
