Not a good deal, since they’re spare and all.

We have a smoker BBQ, and I’m going to read the rest of the thread to see how to do a big piece of meat like that.

Too much sauce and you don’t get to taste the flavour of the meat. Making a good texas sauce could be an all together nuther thread, thanks for the hint.

Labor day holliday is coming up, will be lots of ribs, brisket and other cuts on sale for cheap, I will be stocking the freezer.

I assume it is similar to the Weber Smokey Mountain, which is also an upright smoker. The coals are placed within a ring at the bottom of the smoker. The WSM also includes a water pan which helps moderate the heat and has two grates on which to place food.

The Green Egg is supposed to be a really good product, but is much different in design than most smokers. It’s pricey.

The grill I’m using I bought at Sams on sale right after labor day for about $125, had it for about 5 years. Hard for me to cook without a side firebox.

That’s because this BBQ discussion is about Texas not Carolina style ‘que. Carolinians are the ones who get testy and go to war when it comes to BBQ.

Yeah, I think the side firebox design is really good. I have a WSM and it took a long time for me to sorta master it. The WSM is a perfect size for us, but it would be too limiting for a lot of people. As with most things built by Weber, the quality is really good.
