Hi everyone, thought I would revive this thred for anyone new to cooking brisket this weekend, Enjoy!
As a North Carolinian I reject your premise. It’s just that we know that Eastern North Carolina barbecue is God’s ‘cue. We love the other meats that are grilled and smoked...they’re just not “barbecue.”
Barbecue heathens are not be faulted simply because they were raised wrong or just didn’t know. We forgive you.
Yankees, on the other hand, who think that anything cooked on a grill is barbecue are...well...to be pitied and shunned.

at family get togethers we have bean bombs....put a can of unopened pork & beans in the fire, everyone waits expectently and after a while the can blows up and to a height of about 25 feet. If anyone can catch it without dropping it, they get a healthy round of applause, if they drop it, its boooo time..GG

I just lathered on a wet rub like you made back in your photos from 2008. I’m gonna start cooking my brisket around 6:00 AM tomorrow for a 3:00 PM Christmas dinner.
This is the third one I’ll make following you’re very illustrative guide. The other two were—as you said—6 pounds of heaven!
