Thanksgiving Recipes

I did this last year and a lot of good recipes were posted so I thought I'd try it again. Take one and/or leave one!

If they eat dairy and eggs, I have a Spankopita recipe.

It’s not exactly Thanksgiving-y but it is very nutritious and loaded with protein.

Apple Squash Casserole

Slice apples 1/4 inch thick.
Slice butternut squash 1/3 inch thick.

Layer apples and squash in buttered casserole dish.

Blend and cook until slightly reduced.
1/2 C butter
3/4 C maple syrup
1/4 C apple juice
1 tsp Cinnamon
1/2 tsp Allspice
1/2 tsp Salt

The recipe I have says to bake covered at 350 for about 50 mins and then baste, but IIRC, I poured the mixture over the apples and squash before baking.

This makes a lot so you may want to cut back on the baste recipe and it shouldn’t take so long to cook, either.

I loved it, but the kids didn’t so I never made it much cause I just couldn’t eat that many leftovers.

Sort of. It’s Greek.

This will fill a 9 X 13 baking dish.

You’ll need to buy Phyllo leaves, which can be found in the freezer section of the supermarket in the pastry area. They are somewhat fragile and need some patience to work with, but the rest of the recipe is very easy to make.

You could make the mixture somewhat ahead of time and then assemble it and put it in the oven to bake to come out just as dinner is ready. It’s best fresh like that. It’s delicious and whenever I make it for something like a church covered dish dinner, it’s usually one of the first things to go. I never have leftovers to take home.

Mix together:
3 Pkgs Frozen Spinach
1/2 pound Ricotta
1/2 pound crumbled Feta
4 eggs
Some parsley sprinkled in.

Let the phyllo leaves thaw out. Place 7 phyllo sheets in the bottom of the baking dish. You’ll have to unroll them and cut them to size with a knife on a cutting board. You should use about half the width of the sheet and use the other half for the top layer.

Spoon the spinach mixture into the baking dish. Cover with the rest of the cut phyllo leaves and seal up the bag and refreeze the rest.

Gently brush the top layer of phyllo leaves with melted butter (a must).

Bake at 350 degrees for 50 mins or until the leaves turn a nice golden brown. The spanikopita will puff a some as it gets near being done.

What is the * beside the milk for???? Sorry, I've been away for a while and just now saw your question.

Some prefer using skim milk, though I've never tried or used it.

Yes, provided that you are:

a) A Conservative
b) An un-attached and attractive female who likes "older" men; and
c) Within driving distance from Burlington, VT. lol

Having spent some time in Texas (basic USAF) and Bergstrom AFB (Austin) when I came back from Nam, I can not help but wonder if Lonestar stands for that wonderful state?

If so, I fear you may have to wait a while for your Holiday, Care Package, although I would love to visit Texas again.

I’m with you.

Plus, we only use wild turkeys, not the watery, flavorless commercial things. It would be sacrilege to brine one.

OTOH, injecting with a butter-garlic Cajun injector, especially the thighs and legs....
