Rhode Island Rep. Joseph McNamara is currently trying to pass legislation that would make fried squid the official state appetizer. Since Rhode Island is the squid capital of the world – hey, they have to be good at something – chances are the fried rings served there are exactly what they claim to be. Elsewhere, however, they may be serving you deep fried pig anus and calling it calamari.

I live in the south. I guarantee that I know people who would order pig anus before they would squid and ask for seconds

In the seventies? It’s still done, and it won’t harm you in any way

I am sure it is, but it was trendy in seventies cookbooks to make sure the butcher added it in.

Nothing wrong with beef hearts, they taste like any other cut but they are very tough. Grinding or stewing is the best way to do them.

I'm not opposed to him selling them. But, if I buy ground sirloin, I expect ground sirloin and not whatever "mix" he feels like selling. It is dishonest, at best, and deceptive, at worst.

Yes. The state caught him. Fortunately, a lot of things work right, here in AR. Our AG is suing him, and I would imagine that he will be out of business in short order. Once you sacrifice the public's trust, you never get it back.

I’m all for mixing a little pig product into every single food item of any kind sold in the US, especially in Muslim areas.

With the dried squid, you can reasonably be sure it is squid. Plus, how could you get any part of a pig to taste like dead fish. My wife likes dried salty fish in her boiled rice (vinegar and lots of chili). Why, I’ll never know.
