A Hot Dog Program

Youtube listing of MANY segments of a wonderful documentary that examines almost EVERY local variant on the classic tube steak. A wonderful watch for Memorial Day.

A truly great hot dog, perfectly cooked, needs no toppings.

Mrs. Chandler agrees; she doesn't even use a bun.

I like the dogs split down the center and cooked in a skillet until somewhat scorched. And the buns I like toasted opened and face down in a skillet until crispy.

When I make hotdogs for my 92 y/o mother, I follow the recipe above and add simple yellow mustard and a crispy slice of bacon.

Sliced open, stuffed with cheddar, wrapped in bacon and grilled until the cheese oozes and the bacon is crisp. Serve in a toasted bun with your toppings of choice.

I like to use Hebrew National Hotdogs. Ironic?

I like them almost any way.
I even like them plain.

Plain is good -- also what you can do is cut up about two strips of bacon into small pieces and boil them in your hotdog-water then use that to make rice (with bacon) -- it's delicious.

Ballparks are my faves also. Occasionally a Hebrew National...but usually Ballpark.

There is only one proper way to eat hotdogs!

First, a thin spread of mayo on both sides of the bun, for a moisture barrier.

Next, a layer of sliced pickled jalapenos. Then, a thin layer of good (beanless) chili. Then, another layer of the jalapeno slices. Then, another layer of chili.

Now! add the hotdog!.

On top, more jalapeno slices, more chili, liquid cheese, onions, more jalapeno slices and top with sliced tomato.

>>Yellow mustard and, optionally, sauerkraut — no ketchup, no relish, no BBQ-sauce.<<

Yellow mustard and relish only.

And a ball game.

has to be an all beef dog. Favorite toppings are light ketchup, my homemade zucchini relish and finely chopped sweet onions.

There's also Alice Cooper's "Big Unit" at Alice Cooperstown restaurant in Phoenix...

22-inch frank served on a whole baguette and loaded down with chili, bacon bits, cheese sauce, sauerkraut, chopped jalapenos, diced tomatoes, onions, sweet relish and shredded cheddar, with french fries on the side.
