Growing up (and occasionally still today), I enjoyed cheese and jelly. People thought I was making it up or trying to be gross...but that was my go to sandwich.

Almost all from the east coast or the west coast. That’s OK. We don’t want them chowing down on all our good food here in flyover country.

I'm surprised that there isn't more discussion of fried bologna sandwich variants. Fried bologna sandwiches are commonly found in "flyover country."

Just my opinion, but the key to an excellent sandwich is the bread / meat and cheese ratio.

Just enough bread to keep the sandwich together, but not too much where it overwhelms the main part of the sandwich.

Cooked on a flat-top griddle on top of my Weber grill.

I grind my own meat, bake the buns and enjoy each step of the process.

On a good day I’ll put my smoked brisket/pork shoulder/pork loin up against anyone’s. Get the right bread and the sandwich will be as good as anyone’s.

Just don’t catch me on a bad day.

Watch some Irish people sampling American foods. Search “Irish taste test” or “Irish try” on youtube.
Mostly they couldn’t relate to southern, to seafood, or to cauliflower burgers. But they adore meat.

They missed one. A little known gem is the Debris Sandwich from Mother’s in New Orleans. They have a fine sliced roast beef sandwich. The Debris Sandwich is made from the “junk” that falls into the au jous when slicing the beef. OMG is it the messiest most goodest thing I’ve ever eaten. Laissez les bon temps roulez!

This reminded me of something my Father once said.

He was on a troop train in WWII and it was stopped in Kansas City. He said a Black guy was pushing a cart beside the train selling pork sandwiches to the troops out the windows.

Daddy bought one and said it was the best sandwich he ever had. He probably was hungry too.
