DES MOINES, Iowa (AP) An insatiable demand for bacon depleted frozen pork belly supplies in the U.S. to a record low level for December, but the pork industry is confident it can keep up with demand and avoid any serious shortages.
Bottom line: A pound of bacon may cost a little more as winter wears on, but prices should stabilize by summer.
The U.S. Department of Agriculture reported last week that pork bellies in cold storage fell to 17.7 million pounds last month, the lowest December inventory since records began in 1957. In comparison, more than 52.3 million pounds of pork bellies the cut of the hog from which bacon is derived remained in storage in December 2015.

Just bought a nice ham at Aldi’s for 89 cents a pound.I’m subbing Ham for bacon at breakfast.
A couple of months ago TN’s Governor warned us not to worry about a gas shortage. Pumps were dry 3 hours later.
Fortunately I bought a 10 lb box of bacon just last week. And it’s just me. I should be able to hold out for a couple of weeks.

In the midwest at least, whenever you see a meat processing plant, you will find about half the kids in the local schools speak fluent Spanish. Just saying.
I agree with being prepared. I would advise everyone to go off the grid and plant their own pigs.

I’ve been going to the meat department, and walking past the beef, rolling my eyes! But they’ve been having this great deal on boneless porkchops. Big ones! Two to a pack. As big as my hand and thick. And “Buy One Get One Free!” Like $5.30 a pack, and delicious!
I’ve been wondering about Pork Bellies. I can get the already sliced up at my Asian Market. I’m not interested in making Bacon out of them. What do they taste like when fried up like Bacon?
