Your assertion is ridiculous on its face: the Hebrew Scriptures accepted by the Jews are identical almost to the word with the ones used by the Church both before and after the 300s.

As for the New Testament texts, we have nearly-complete manuscripts dating from well before the canonical Church councils of the 300s and thousands and thousands of even earlier corroborating quotes and references.

I've read a few non-canonical gospels. Even though these gospels are not inspired by the Holy Spirit, they still offer a window on the issues of the day among Christians.
Many of our Christian traditions and doctrines were hotly debated in those days, but now they are considered settled disputes.

The flaw with Moorcock's premise is that John the Baptist and Jesus were cousins. John would not have mistaken Glogauer for Jesus. Great fiction, though. I loved the Elric books.

You either understand that HE IS who HE says HE IS - the timeless Creator of the Universe and World, or you don't.
If you believe he former, you probably have not trouble believing that HE could and would protect HIS Word. You'd therefore stick with the Bible built upon the commonly used and accepted Scriptures. If you believe the latter, then sure, exult any heretical writings that are discovered (news flash: it is not too surprising that satan used his influence to attack God's Word -- and it is therefore not too surprising that there are an abundance of heretical writings/false gospels written around the same time as the authentic scriptures), or pulled out of the trash heaps -- and give credence to theories of grand conspiracies of the 'church' to keep the truth out of people's hands ... all the while as an impotent god could only wring his hands in the corner...
Sorry, these latest 'discoveries' register a big zero on my list of material to read.
