Christmas Cookie Exchange
To all you wonderful bakers out there......do you have a favorite cookie recipe?
We've made some Gingersnaps to share.....
The World's Best Gingersnap Cookie Recipe
1 cup butter 1 cup date sugar 1/4 cup dark molasses 1 egg Mix these ingredients together, then add: 1/2 tsp. ground cloves 1/2 tsp. ground ginger 1 tsp. ground cinnamon Mix these and then add: 2 3/4 cup flour (can use whole wheat flour...) 1 tsp. baking soda Mix until they are ready to roll into balls (do NOT roll in sugar of any kind) and place evenly on greased cookie sheet. Bake at 375 degrees for 6-8 minutes until they are cracked on top. I always like to take them out early so they are especially soft and chewy. Every oven is different, so check often and enjoy!
Chocolate Pistachio Cookies
1/2 cup sugar 2 large egg yolks, lightly beaten 3 ounces semisweet chocolate, melted and cooled 4 ounces salted shelled pistachios (about 1 cup), ground to a paste in a food processor 1 large egg white 1/8 teaspoon pure vanilla extract Pinch of coarse salt 6 ounces bittersweet chocolate, chopped 1 tablespoon vegetable shortening For the garnish: slivered, unsalted, shelled pistachios (optional)
Directions Make filling: Bring 1/4 cup sugar and 1/4 cup water to a simmer in a small saucepan over medium heat, stirring until sugar has dissolved; set aside. Put egg yolks in the heatproof bowl of an electric mixer set over a pan of simmering water. Whisk by hand until yolks are warm to the touch, about 2 minutes. Fit mixer with the whisk attachment. Mix yolks on medium speed; pour in sugar syrup. Raise speed to high; mix until mixture is cool and fluffy, about 3 minutes. Reduce speed to medium; drizzle in melted chocolate. Refrigerate until firm, about 45 minutes.
Make cookies: Put pistachio paste and rest of sugar in the clean bowl of an electric mixer fitted with the paddle attachment. Mix on medium speed until smooth. Mix in the egg white, vanilla, and salt. Preheat oven to 350 degrees. Transfer dough to a pastry bag fitted with a small (about 1/4 inch) plain round tip. Pipe 1-inch rounds onto a baking sheet lined with parchment paper, spacing about 1 inch apart. Bake cookies until firm and golden around edges, about 10 minutes. Transfer on parchment to a wire rack, and let cool completely.
Place cookies, bottom sides up, on a wire rack set over a baking sheet. Spread 1 to 1 1/2 teaspoons chocolate filling on bottom of half of the cookies. Sandwich with remaining cookies. Freeze 1 hour.
Make glaze: Melt chocolate in a heatproof bowl set over a pan of simmering water, stirring occasionally. Remove from heat. Add shortening; stir until combined. Let cool, stirring, until mixture is lukewarm. Using a chocolate fork or regular fork, hold 1 cookie at a time above bowl of chocolate glaze. Spoon glaze over cookie, letting excess drip back into bowl. Transfer to a wire rack set over a baking sheet. Garnish with slivered pistachios. Refrigerate until set, 5 minutes. Cookies can be refrigerated in single layers in airtight containers up to 3 days.

Gone With The Wind

The epic film based on Margaret Mitchells novel
Gone With the Wind opens with these lines:
There was a land of Cavaliers and Cotton Fields called the Old South. Here in this pretty world, Gallantry took its last bow. . . . Look for it only in books, for it is no more than a dream remembered, a Civilization gone with the wind.
Not only does a way of life disappear but also the dreams that drive the main characters. Throughout the Civil War, Scarlett OHara is preoccupied with her love for Ashley Wilkes. But by storys end, she is disillusioned.
Solomon saw the futility of seeking satisfaction in people and things. Despite amassing wealth and knowledge, completing great projects, and marrying many wives, he said, All is vanity and grasping for the wind (Eccl. 1:14).
Why does chasing transitory things leave us unfulfilled? The biblical answer is that we were created to find our ultimate fulfillment in God. Jesus promised, I have come that they may have life, and that they may have it more abundantly (John 10:10).
People and things come and go. But the spiritual satisfaction Christ offers sustains us in this world and will endure into eternity.
What comes from man will never last,
Its here today, tomorrow past;
What comes from God will always be

Oatmeal Cranberry Cookies
* 1 cup butter, softened
* 1 cup firmly packed light brown sugar
* 1/2 cup granulated sugar
* 1 large egg
* 1 tablespoon vanilla extract
* 2 cups all-purpose flour
* 1 teaspoon baking soda
* 1/2 teaspoon baking powder
* 1/2 teaspoon salt
* 2 cups sweetened dried cranberries
* 1 & 1/2 cups coarsely chopped pecans, toasted
* 1 & 1/4 cups quick-cooking oats
* 8 ounces white chocolate baking squares or bars (optional)
Preheat oven to 375°.
Beat butter until creamy. Gradually add sugars and mix well. Add egg and vanilla. Mix well.
Combine flour, baking soda, baking powder, and salt. Add gradually to butter mixture. Mix until blended. Stir in cranberries, pecans, and oats.
Drop dough by tablespoonfuls onto lined or lightly greased baking sheets. Place cookies about 2 inches apart. Bake for 8 to 10 minutes or until lightly browned.
Cool on baking sheets for 2 minutes. Then, transfer to wire racks to finish cooling.
Melt white chocolate and transfer to a zip-top bag. Cut the corner of the bag and use to drizzle white chocolate onto cookies.
Makes about 4 dozen cookies.
