Cletus & Billy Bob
Cletus is passin' by Billy Bobs hay barn one day when, through a gap in the door, he sees Billy Bob doin' a slow n' sensual striptease in front of an ol' green John Deere.
Buttocks clenched, he performs a slow pirouette, n' gently slides off first the right strap of his overalls, followed by the left. He then hunches his shoulders forward n' in a classic striptease move, lets his overalls fall down to his hips, revealing a torn and frayed plaid shirt. Then, grabbin' both sides of his shirt, he rips it apart to reveal his stained T-shirt underneath. With a final flourish, he tears the T-shirt from his body, and hurls his baseball cap onto a pile of hay.
Havin' seen enough, Cletus rushes in n' says, What the heck ya doin', Billy Bob?
Jeez, Cletus, ya skeer'd the bejeezers outta me, says an obviously embarrassed Billy Bob. But men the Ol' Lady been havin trouble lately in the bedroom d'partment, and the therapist suggested I do "somethin' sexy to a tractor'."

1992 - Germany's lower house of parliament voted in favor of the Maastricht Treaty on European unity.
1993 - Colombian drug lord Pablo Escobar was shot to death by security forces in Medellin.
1993 - An unemployed man opened fire at an unemployment agency in Oxnard, Ca. He killed three workers at the location and a police officer during a chase that ended in Ventura, where the man himself was gunned down.
1993 - The space shuttle Endeavor< blasted off on a mission to fix the Hubble Space Telescope.

*Sour Cream Chicken Enchiladas*
2 tablespoons olive or canola oil 1 cup finely chopped onion 2 cups cooked, shredded chicken (white meat is best) 1/2 teaspoon salt 1 teaspoon ground cumin or to taste 3.5 cups shredded Monterey Jack cheese (a small amount of cheddar & jack sprinkled over the top right after you pull it out of the oven then topped with cilantro makes it look pretty):)
12 corn tortillas 1/2 cup shortening, oil or lard
1/4 cup butter 1/4 cup all-purpose flour 2 cups chicken broth 1/2 teaspoon salt 1/4 teaspoon white or black pepper Add more cumin if you're like me!:) 2 cups sour cream 1/2 cup (1 7-ounce can) chopped green chiles (this is a great time to use your roasted fresh chilis if you have some)
2 tablespoons chopped cilantro Preheat oven to 375°F. Spray a 9x13-inch baking dish with cooking spray.
The Filling: Sauté the onion in the oil just until softened. Add the shredded chicken, sprinkle with the salt, and a bit of the sauce (recipe below) & toss to combine. Set aside and allow to cool. Add the shredded Monterey Jack Cheese and mix thoroughly.
The Tortillas: Soften the corn tortillas by Heating the shortening, oil or lard in a skillet and, using tongs, dipping each tortilla for 15 seconds in the hot oil, letting the excess drip back into the skillet. Drain the softened tortillas on paper towels as they are cooked. Place an equal amount of the chicken mixture on each of the 12 tortillas, roll them up and place them, seam side down, in the baking dish.
The Sauce: Over medium heat in a saucepan, melt the butter, add the flour, and stir vigorously with a wooden spoon for a minute or so. Gradually whisk in the chicken broth, and cook until mixture thickens and bubbles. Remove from the burner, and stir in the sour cream and green chiles. Do not allow sauce to boil, but gently heat through.
Pour the sauce evenly over the tortillas in the dish, and bake for 30 minutes at 375°F or just til heated through. Sprinkle with chopped cilantro, and serve hot. Makes four servings of three enchiladas each.

I’ll have even MORE time come Jan/Feb, LOL!
Right now I’m selling Christmas Trees and all the trimmings, Poinsettia, Christmas Cactus, Amarylis, Paperwhites, etc. at the garden center. Next week is our last big SALE of the season, then I can pretty much relax for two months and then hit it hard again come March.
I love my life. :)
