More people chose to eat the bugs when they were told it was trendy, versus being told they were healthy and eating them would save the planet.

They need to set it up like they did carbon credits so they could keep their mansions by using the credits of those living in huts. I will keep my meat credits and take any of theirs they don’t need.

Ah, they're already doing it in much of the world. Ants and crickets are known delicacies in certain parts of the world (inago no tsukudani in Nagano Prefecture in Japan and chapulines in Oaxaca state in Mexico).
