And so begins our annual 7th TexasCowboy Memorial Shoot.

Thank you humble gunner for the graphic.

TexasCowboy (aka COB1) was a true Texas gentleman, great friend, patriot, and a firm believer in the 2nd Amendment. It is truly an honor to continue a tradition he started many years ago, hosting shoots for FRiends around the great state of Texas.

Many FReepers are coming into town on Thursday so that they can have a tourist day on Friday. Those lucky people are going to be made (a good) miserable Thursday evening by enjoying TheMom’s Kick Ass Enchilada’s.

The only set tourist place is The Lady Lex.

Friday evening we will meet at Captain Benny’s, 103 Fulton Beach Road Fulton, TX 78382, at 8:00 p.m., for a delicious seafood dinner. (They do not take credit cards or serve liquor ~ so remember to bring your cash & booze.)

Saturday morning we meet for breakfast at Alice Faye’s, 910 North Fulton Beach Road, Fulton, TX 78358, at 8:00 a.m. The shoot is scheduled to start at 10:00 a.m. at, Schwenke’s Gun & Pistol Range, 4407 FM 1069 Aransas Pass, TX, 78336. Mr. Schwenke has reserved the 25 yard shooting station for our group to use as “home base”. The only major rule at this range is do not shoot the livestock. A BBQ lunch will be served at 12:30ish.

Once the shooting is done some of us will be going to the Rockport Seafair, while others will go back to the Pelican Bay cottages for some R&R. Saturday evening will be filled with yummy junk food and margaritas!

According to the forecast, it looks as the weather will be perfect. Lows in the mid-sixty’s, highs in the mid-eighty’s.

No joke TheMom, every other year stinks! I miss ya lots, miss seeing Eaker and The Girl. Will NEVER forget the Jeep and gun pics. WAY COOL!

TRYING to work things out here to free up mucho days to be able to spend important and most fun time with our FRiends, and my darling baby girls.

MS.B should definitely be here with us. And I can think of many others that may enjoy spending some time with us NUTS, LOL! We need a plan.

Bryan balked a bit about paying now for a room in June, but I’ll have a little talk with him later on this morning about exactly how many days we’ll be staying, the logistics of NYT’s dinner invitation, booking the cottage we want, and a few other things.

Packing ordnance should be a lot easier for us this time because we have all the paperwork ducks in a row.

We haven’t decided on which cottage just yet, so we’ll probably take the virtual tours this morning as well.

I just can’t get enough of you Texans! Really looking forward to seeing every last one of you again, plus any FReepers I haven’t met just yet.

The Friday night dinner & Saturday breakfast places have not yet been decided. Saturday after the shoot lunch will be provided by our own chef ~ cpdiii.

Dietz is a good choice for me as it is only two hours from me and makes the logistics of the meal preparation easier for me.

I was thinking the following:
1. Shrimp Creole or
2. Crab and Shrimp Gumbo.

For those that do not like seafood smoked Brisket will do. Creole and Gumbo can be made the day prior as can the Brisket. Thus I can have it cooked and ready to eat after just heating it up at the range.

How I make my Brisket:
1. Collect some oak from my place. Real wood cooks better than charcoal but it takes more.
2. Get a large fire going in the pit and let it burn down to red hot coals. This takes about two beers. Place Brisket on the grate just about 2 inches above the red hot coal. No beer is consumed at this time as you are busy.
3. When the outside is sealed by the heat and moderately charred but not black, remove from grill and place on smoking side of the pit.
4. Place several large pieces of oak that have been soaked with water for a few hours on top of the hot coals.
5. Seal up the BBQ pit with the exception of a small inlet for air and a small outlet for the smoke.
6. Drink 3 beers (about two or three hours)
7. Remove from grill and place in roasting pan. Cover the Brisket with a bunch of Sweet Baby Rays BBQ sauce, salt and pepper. Cover and seal it with Heavy Duty aluminum foil. Cook it in the oven at 240 degrees for about 12 hours. This is for a 15-20 pound Brisket.
8. Remove from oven and let stand for about 15 minutes then slice and eat.

When smoking and cooking always have the fat side up. The Brisket will make its own gravy that is second to none. Use it on potatoes, rice etc.
Make sure you pan is relatively deep as the
Brisket will make a lot of gravy and you do not want it to spill into the oven. On occasion I will put onions and potatoes with the Brisket about 1-1/2 hours before it is finished. It cooks up nicely in the Brisket gravy.

PS I really missed not going to the shoot this year. However, I must admit I had a great time in Louisiana with old friends. At a Catholic Coon Ass wedding a little alcohol has been known to be consumed. The grooms mom arranged for everyone to meet at her house prior to the wedding. Two buses then took us to the church and after the wedding they took us to the reception. Thus we were able to consume with great gusto and not worry. After the reception the buses brought us home, or to hotel etc.

We had a good time but I still missed being with the El Roy Gang at the shoot. If I had been at the shoot I would have also missed my old gang from my oil field days.

I will see you this June of 2013.
