Somebody has to eat them, might as well be us. I really prefer the red ones though, particularly a huge slice on a cold navy bean sandwich. Probably be some people that would turn up their nose at this kind of a sandwich but it’s quick to fix once the beans are done and plenty inexpensive.

Just cook up a big pot of navy beans and ham hocks. We take whatever is left from dinner and put them in the frig. Then make a regular sandwich for lunch the next day or two from the leftovers. Assemble just like a sandwich - bread, left over beans, thick slices of onion, bread. Eat and enjoy. Easy peasy and really inexpensive. When we were growing up my mom always made homemade onion bread but I’m lazy and just use plain old cheap white bread from the store.

Tried it with red beans and black beans once but navy beans seasoned with ham hocks seem to be a whole lot better.

Not quite a 180, but maybe 120. But....I think I have everything under control now...only about an hour’s worth of homework.

Interesting note...a co-worker offered to take over a couple of my units. With reluctance I let 3 go...2 should be a piece of cake, the third can be tricky. It is tricky this week. She has tried twice to get him paid right. There is still an issue that we will work on in the morning. d:o)

But the hard drive on my laptop is just about gone. I use it for music and posting the replies my dying desktop won’t post. I took it to work and passed it to my computer guy to take and deal with Dell directly. I think when I get it back I’ll have him come and get the new one, downstairs and still in the box, all set up. He said he can, via cable, move stuff from the old to the new. It would take me forever and I don’t have any uninterrupted time to get it done.

Well drat! I’d hoped things would go fairly smoothly.

I remember you saying a co-worker offered to lighten your load a bit. I gather this is her first week with the tricky one. Maybe after things are straightened out, she won’t need help next time. Wouldn’t that be nice?

Yep, it sounds like it’s time to get that new computer out of the box at last. LOL! Great that the computer guy can do all the transfer stuff for you. Lots to transfer and that does take time, which you don’t have much of these days.

You have trouble making decisions quickly. Everything looks good to you... especially at a restaurant (Nope....stick to favorites)

That is a lot of carbs for how I am supposed to eat but I’ll definitely give it a whirl. I’ll make sure to add some carmelized onions to the beans. Is this a Northern thing?

Love a good burger.
Don't want no catsup on it; however,
when the tomatoes are fresh from the garden
I like having a slice
along with mayo and onions and pickles.
And, though it isn't healthy, sometimes I eat a burger
with bacon too.

Nice weather yesterday and no rain. YES!
Today will be more of the same, which
is good as the yard still feels like a wet sponge.

I did manage to get about 2.5 hours of painting done
but not much accomplished.

Today, is rest day and
writing, darn it!

Gonna make my rounds.

Happy Wednesday, Beachie! (Retired folks don't have humpdays)

I enjoyed a nice lunch with son yesterday and hung out with him most of the afternoon. We're planning a weekend summer trip or two.

Finally drying out your way, that's encouraging. Keep painting! :-)

You planning anything this coming holiday weekend?

What sweet sounding words!

With so much rain, it's hard to plan any outdoor activities. I haven't heard anything from the family, so no big plans at the moment. Hubby has to help one of his nieces to move on Saturday, so I'll have most of the day to myself. I'll probably just hang out and washing bedding and rugs or something while he's gone. I'd be interested in going to a movie but a holiday weekend is risky. Besides the new TAMNTS is coming out soon and it's a family event with our youngest and his daughter.

Where did you and son-boy have lunch? Awesome that you two will be doing a summer trip. Let me know if you head our way! Lots to see in DC.

Wouldn’t think so. I grew up in Kansas and now live in Texas. Beans were a staple of our diet when I was growing up, particularly in the late spring when canned vegetables from the previous season were all gone and the new growing season had not yet arrived.

We always had meat at every meal since we raised cattle, hogs and chicken. Lots of sausage, gravy and homemade biscuits for breakfast. And always desert as a part of dinner. Bread pudding was a staple. Have tried to duplicate my mom’s recipe but somehow never got it quite right.
