As far as I understand without consulting any references, the person of Jesus, being a hypostatic union of both divine and human natures, died on the cross.

Could be both, no? It is certainly Mary's seed which provides salvation. But it is also, due to our common parentage, Eve's seed. So both could work.

Dave, the only woman alive at the time was Eve. It would be a little odd for God to refer to "the woman" here to mean anyone other than Eve.

Certainly the literal reading is of Eve. But though you don't subscribe to our theories of prophecy, you don't doubt that God could encode a message which would only be picked up later?
