I am going to harrass her to do some time as a line cook or a prep cook.

Dear Mother,
You need to take responsibility! Take an EMT course. Learn how to sew lacerations, stop the bleeding, and start IV’s in case of severe shock.
Stock up on first aid supplies.
Know where your daughter is at all times.
Keep her away from sharp objects.
And never forget: It’s your fault!
Hope this helps.

I saw a news article about culinary school graduates who are suing their culinary school.
the alleged lack of skill demonstrated by some students who were allowed to pass through to graduation including the pizza-maker who reportedly couldn't even boil water was just one of many problems
Part of the lawsuit was also about the lack of jobs for chefs and the low pay, even though the grads had invested considerable money in their "education."

If your house is like my house all the knives I use for food preparations are razor sharp. Some people are not use to using very sharp knives.

Thank God you have your daughter around. Leave her to make her own place in the world. You are lucky to have her helping with pickling. Enjoy every second, accept her for who she is.

Put a helmet on her head and send her back to school on the short bus.....
Of course, pin a note to her dress before letting her on the bus....

I have and use two mandolins, and I do not let anyone, even experienced cooks, near them. The couple of times I have, they have ended up cut because they will not take them seriously. I may start out with a potato without the protector, but I only cut a few slices and then I attach the guide-shield.
It's amazing how the mandolin will bring out the stupidity in some cooks.

I’ve seen a lot of chefs cut themselves on The Food Network, Top Chef, etc. The chance of cutting yourself is worse with a dull knife.

What does one do with a clumsey daughter?
Well, if her name was Chaz Bono, I could talk about options not normally thought about, but that would be in bad taste...

Your daughter may not be quite as clumsey as you think. Many "professional" people have cut themselves badly on mandolin food cutters. The exposed blades are very sharp.
There are smaller 'V' style mandolin cutters often come complete with food grippers to prevent cuts. I use one of these with a food gripper to prepare cukes for pickling. Larger box-style mandolin food cutters for large food items such as cabbage halves/quarters (for sauerkraut) are often designed with food grippers already built into them to prevent cuts.
Although you likely do already, shower your son/daughter with sincere praise when they get things correct, irrespective of their age.
