Sorry to be a posting maniac. I ordered a silicone waffle sheet from a woman at school who sells Avon. It makes 4 rectangular waffles. I had decent hopes, but I made blueberry waffles ( you bake it on a baking sheet in the oven) & they were fantastic! And easy & mess free. A real find!

Being from the south, Canned Hominy is used much like canned corn. Frankly, I love the stuff! But I also like grits which sometimes leaves nothing but turned up noses :)
When preparing hominy, usually open the can, drain, and place it in a skillet with salt pepper and some butter. Allow it to heat adding some grated cheese atop along with salt and pepper. It’s also good in soups and even chili. There are numerous sites to be found and here are a few you might want to check

Do you prefer white or yellow? lol, for me it makes no difference both are eaten with either hand! I’ve not seen dried hominy on the store shelves; therefore it has always been canned used.
Earlier in the season, I found myself run over with a plenty red potatoes and greens of many kinds. I am always in search of new ways to sneak more veggies in. So..
- Boiled a pound or so of red potatoes with some butter and sea salt and then cut them down to bite size. Peeled or not to your taste.
- Coarsely chopped garden greens.
- 5 diced green onions.
- I proportion about 2 to 1 greens to potatoes by volume. The greens compress and stick to the potatoes as you dress the salad.
- Added one packet of Good Seasons Italian dressing mix.
- Dressed with one part hand made olive oil mayo and 2 parts sour cream. I have tried Greek yogurt instead of sour cream. It took away a lot of the creamy texture and added the tang. I prefer sour cream.
Picky eaters that would shy away from the greens will generally eat this salad - it’s taters! :)
Hubby maintains a sour dough starter and makes the best sour dough pancakes. They are SO light and fluffy, just melt in your mouth.
I made the Eggs Gruyere today and it turned out great. I baked it in three smaller pans so I could freeze two. Hope that works. Does anyone have any tried and true fresh green bean recipes? We have lots in the garden.
I don’t have a recipe right now but my FAVORITE brunch casserole is the Mexican one. Eggs, cheese, chills, baked..... Soooo good. The Gruyere one sounds very good but my little sensory boy would run out of the house screaming, smelling the Gruyere. Might be worth it one day still, yum.
I am unpacking and consolidating my kitchen things with my mom’s (she has Alzheimer’s and is visiting out of state right now while I do this). I just unpacked my big griddle. Anyone have some great pancake recipes?
I made these for my brother who was visiting us from Canada. He and my husband ate most of these and wanted more. However, with all the rest of the brunch food being served ( baked ham etc), one pan was more than enough re calories and fat. Recipe came from FB and I can’t recall the source. I used frozen biscuits that I keep on hand.
Bagel Pull-Apart Bread
Ingredients:
1 10-oz. can biscuit dough
4 tablespoon melted butter
1 8-oz. package cream cheese
3 tablespoon bagel seasoning or any other type you have on hand. Bagel seasoning has dried herbs etc in it.
Prep Time: 10 minutes/Cook Time: 30 minutes/ Total Time: 40 minutes. Servings: 8
Preparation:
Cut each biscuit piece in half. Roll each half into a ball and then flatten with the palm of your hand.
Place a small scoop of cream cheese in the center of the flattened dough. Then roll the dough back up into a ball around the cream cheese. Repeat for each ball of dough.
Place each dough ball in a glass pie pan so that they stick to each other. Pour melted butter on top, then sprinkle liberally with everything seasoning.
Bake at 350°F for 30 minutes, or until golden brown.
Pull apart and enjoy.
Chop up one zucchini, small onion and sweat them in some butter until soft. Add in chopped tomatoes and chopped garlic.
When softened add in a squirt of Dijon mustard and a splash of heavy cream. (It's brunch be indulgent!)
Now add in beaten eggs, (I used four) salt, pepper and chopped fresh parsley. Cover and let cook for a couple of minutes, mix so that the uncooked egg has a chance to cook. Sprinkle with whatever white cheese you have handy. Munster, mozzarella, provolone, Parmesan, it's all good!
Cover and let the eggs cook though and the cheese melt. Maybe another minute.
I served it with cream biscuits that I cooked on the stove top and fresh fruit. Peaches in case you were wondering.
