Sticking to an anti-inflammatory diet isn’t easy. It involves cutting ties with gluten, dairy, and (of course) sugar. Sure, there are some amazing nut cheeses, but they aren’t typically what’s being cut into cubes and passed around on Bachelorette Mondays at your friend’s place.

Good news: Scientists just endorsed a way for you to get your cheese fix while still sticking to your meal plan. According to Metro UK, a new study out of Korea found that the probiotics in Swiss cheese actually have the ability to reduce inflammation and strengthen your immune system. Is your mind-blown?

The Korean study doesn’t stand alone: When researchers fed cheese containing the probiotic strain to mice in another recent study, it helped protect them from acute colitis.

While you’re preparing your perfectly ‘gramable cheese board–with Swiss as the star, of course—be sure to add some walnuts. Researchers found them to be effective in reducing appetite due to their high omega-3 fatty acid content. “Walnuts can alter the way our brains view food and impact our appetites,” says the study’s lead author, Olivia M. Farr of Beth Israel Deaconess Medical Center in Boston. “Our results confirm the current recommendations to include walnuts as part of a healthy diet.”

Now that Swiss cheese is back on the table, so to speak, those walnuts just might help stop you from gobbling up the whole plate. After all, there’s one piece of healthy eating advice that has yet to be disputed: Everything in moderation.

We are drinking only A2 milk and also making kefir with it. I believe kefir has the broadest spectrum of probiotics. More research indicates it’s the A1 protein that causes most health problems related to milk. Lots of research out there. Ask if you would like more info. We also bought heavily into their stock.

A2 milk is the way milk used to be before Holsteins became so prevalent. They carry the A1 protein. This was discovered in the 90’s. It was a genetic aberration that proliferated. There’s a book - The devil is in the milk. Info at a2milk.com. They also have a facebook page and youtube channel. There is also a separate youtube by a doctor giving a talk in Wisconsin, lots of science and reporting on the studies. We drank goats milk for over 20 years. Goats milk is all a2 naturally. The A1 beta casein protein is the problem. Links to heart disease, diabetes, crohns disease, autism even schizophrenia. Many people who thought they were lactose intolerant have no trouble with A2 milk. They started in New Zealand which with Australia is nearly all a2. Their stock is up in New Zealand over 135% so far this year. Early this year they began a branch in Boulder Colorado. The fresh milk is being sold in many states. The a2 milk.com website will show you where you can find it. It is the most delicious and pure milk you will ever taste. Better than our fresh goats milk. I have known about the A1 A2 story for over 15 years and was thrilled to see it in our local stores. This is a slow tidal wave. Many herds in the US are converting but it does take time and careful breeding. The a2 company owns the patents on the sales and the genetic testing until 2034. You can buy a brown cow like a Guernsey or Jersey but unless you get it tested you can’t be sure. Cows are either A1A1, A1A2 or A2A2. The test is done by submitting hairs from the tailhead. Our own vet has a few brown cows and has been working for years to get to A2A2 and he just had his first A2A2 heifer born this spring. This is for real just not talked about much - the dairy industry doesn’t want people to stop drinking milk. The big story right now is they are poised to start a new contract in January with China for their A2 Platinum baby formula. Not available in stores here yet but I just saw you can order it on Amazon.
