SOMEONE has to have PhotoShop skills to make a “Chicken Of The Trees” tuna can with Charlie Iguana.

I am not that person but I can see it my mind’s eye.

I would definitely try to eat a properly prepared iguana. Been waning to eat alligator for a long time.

The most exotic thing I’ve ever eaten was ostrich loin. And, no, it didn’t taste like chicken. It looked and tasted like beef. Very tasty.

I suspect there may be a lot of small delicate bones to remove in an Iguana. They both slither and crawl with great speed and flexibility. Such movement would require a strong ‘armature’ or bone structure, but it must also be lightweight, sort of like with large nesting birds.

They are a delicacy in many of the Carribean islands. A few years ago I was reading that there was a shortage in some of the areas and they had to import them from other islands.

People eating lizards in Florida is better than sacrificing livestock at the courthouse.

Probably no worse than rattlesnake. Definitely safer to harvest.

My son has eaten one. I don’t recall him raving about the flavor though.

Iguanas are an invasive species in Florida

So are pythons and New York liberals. How do pythons taste? I expect the New York liberals to be as nasty and bitter on the plate as they are running wild.

Directions
Since you can never tell what the weight is until you have it you will have to wing it. ...
Declaw, skin and gut.
Salt and pepper to taste.
Grill or broil till cooked through. ...
Cover with lime juice and cilantro.
The meat will taste a little like, yes, chicken. ...
Makes a nice meat filling for tacos.
