Head cheese is actually very good, except for the name.
Our folks sent us with egg sandwiches. Cheap, and good, until you’ve had them every day breakfast and lunch for weeks. It was a lucky day if there was time to fry bacon to put on them.
Fish head soup is good, particularly grouper heads. I always save the bones and heads to make fish broth, very good for preventing achy joints.
