There is something about a real potato pancake, they may look like hash browns, but taste way much better.

We always grated the potatoes instead of shredding them.

Texas potato pancakes are made if there is any left over mashed potato’s (not instant).

Mix 1-2 eggs and mix in just enough flour to stiffen and shape into flat round cakes.

Pan fry.

My mama made them from leftover mashed potatoes if there was any left over. Just shaped them like pancakes and fried them up for breakfast the next day. Delish!

I worked in a resteraunt that made food from other cultures like Scandinavia, Germany etc and they had an excellent potato pancake. The kind of food they served was a bit on the bland side, but was very down home style eating, which I liked. The potato pancakes was one of my go to for my breaks. The potato salad was really good too.
