There are over 38,000 Mexican restaurants across the United States. Mexican food is the most popular international cuisine in the U.S., representing 42% of all ethnic food sales. It’s represented on the menus of one in every 10 restaurants in the United States. With so many Mexican restaurants to choose from, the real question becomes how to spot authentic Mexican food.

I prefer authentic NEW Mexico Mexican cooking. I’ll accept authentic Arizona Mexican or Texas Mexican. Most of the Left Coast Mexican...well, I’d have to visit California or Washington state, and WA state is fine once you get 150 miles inland, but still...no rice in my burrito, and if I have to tell you that, I don’t want to eat there.

Authentic Mexican Mexican? Don’t know. Don’t care. If it is close to NEW Mexico Mexican, then OK.

The best thing I’ve had in a Mexican restaurant in the US: Chiles Rellenos. And yes, ‘Abuelita’ was making them in the back.

I guess I do too. We have one supposedly authentic Mexican place in my neighborhood and I've never had a good meal there. Diana Kennedy's Cuisines of Mexico is supposedly the last word on authentic, updated several years ago.

We have two Mexican (I think they are accurately called Tex-Mex) nearby, one with a mariachi band and one without. Guess which one is better.

Of those 4? La Victoria Salsa Brava, but it does not come close to a good fresh hot sauce

Since I moved to AZ, actually, I started a book “1000 Enchiladas” and with a friend, we’re starting at one side of Phoenix and working our way to the other. We’ve hit five so far (not even counting our stand-bys and favorites). One of the five was excellent, but not without weaknesses. The others were not up to par.

It’s a blast.

It seems to have a more pure ‘pepper’ flavor, and is a little more vinegar-y, somehow. I’ve never found a bottled sauce really like it.

I have never found a bottle sauce that I loved.

Sriracha is close but is not right with Mexican

I always have that and Bufalo brand Chipolte on hand
