Also, watch the wording. LINKED and CORRELATED have two different meanings. Also, how was the meat processed? How was the meat cooked? High temp cooking vs low temp cooking causes different chemical reactions.

Complete bull$hit. These studies are bogus and based on bad science. They subject rats to a substance found in bacon, but in extremely high concentrations. A certain percentage of the rats die due to cancer. They then estimate the concentration of the substance consumed by humans and adjust the percentage. They then breathlessly shout that a certain number of humans will die from the substance every year, etc.
I believe you’re onto something there.
*First, create a crisis — or scare the people by telling them they’re gonna die.
*Then you can take things away from them.
Last night I made bacon wrapped stuffed jalapeno’s and fried potatos with onion and bacon to go with a bacon wrapped venison tenderloin.

People have cherished animal fat as a very important part of their diet for thousands of years. We have colloquial phrases like "the fat of the land", "chewing the fat", and "bringing home the bacon". Traditional cultures have developed all sorts of ways of preserving animal fats such as lardo and schmaltz. The traditional eskimo diet is about 70% animal fat. Animal fats are an important part of the human diet. If they weren't, we would not have culinary histories full of fat, and we would not find fat delicious.
You can stuff them with any cheese you like but I prefer Brie. I’ve had them with Pimento cheese also and they were damn tasty. I cut the stem end off, get as much of the seed out as I can. Stuff them and then put a small piece of bacon over the top and then wrap with bacon using a tooth pick through both. I cook them standing up in a plate with holes in it just big enough to keep them from falling over.
I’m 68 this November and had a complete physical this January. Other than my hearing loss everything else checked out fine, I smoked the tread mill. Field artillery plays hell on the hearing but that was a long time ago.

Never been a huge fan of lots of bacon but it has its place - my favorite “processed” meat is thick slabs of dead cow seared on the outside and next to raw on the inside.
Thank you .. I’ll be making this and will try the Brie first as it’s one of my favorites. I’m the only one in my family that eats jalapeños, so more for me!

We get premium thick sliced pepper bacon without nitrates at one of the meat markets we go to.
They will divide the lb into 3 or 4 thick slices in each units/packages and wrap the units in wrap for freezing.
When we get home, 1 pack stays in the fridge and the rest go into the freezer. They stay in the freezer until needed.
We use the pepper bacon as seasoning in soups and stews and in egg dishes. We used to wrap our pork loins with it before charcoal grilling it. Now, we get the pork loins with bacon on the top. Of course we charcoal grill bacon burgers and bacon wrapped steaks or chicken fillets.
Of course nothing beats a BLT with home grown tomatoes/lettuce and a couple of slices of fried pepper bacon for a lunch or quick dinner.
