Crab and Avocado Salad

Ingredients:

3 large avocados

2 1/2 lbs. lump crab meat

1/2 cup celery, chopped fine

1/4 cup lemon juice

4 tbsp. olive oil

1/4 cup vinegar

1/4 tsp. cayenne pepper

3 tbsp. green onions, chopped fine

salt and pepper to taste

You know how much 2 1/2 pounds of lump crab meat cost? And you want to make a salad with it?

You can always substitute the crab, the recipe is just a guide, you can tweek it. I personally dont eat pork or seafood but would probably replace the crab with tuna fish or pollack.

For a lower cost version one could use Krab meat which is crab flavored fish last I looked it was $3.00 per lb. vs 10X that for real lump crab meat. With all that other stuff in there only the most discriminating could taste the difference.
