SD town finally rid of 44 tons of rotten bison

BRIDGEWATER, S.D. (AP) -- Behind the freezer doors at a meat plant mysteriously abandoned by its owner, the 44 tons of bison meat managed to hold its own for months, masked by the brutal chill of two South Dakota winters. Once the power was cut and spring thaw arrived, nature took over. And enough rotting meat to fill a high school gym did exactly what you'd expect: It stank. It stank at the bank. It smelled at the law office. It reeked at the cafe. Even the jewelry store wasn't immune. Everyone in this tiny town could smell it, everywhere they went....

maggots can clean up a lot in a very short time. Of course you need lots and lots of flies first. It could take awhile to grow the fly population big enough to make that many maggots. When it’s hot outside, I’ve seen a dead animal go from “just killed” to hide and bones in 2 days flat. all by maggots and beetles, afaik

Mmmm Bison....

I had some delicious bison sausage a couple weeks ago at a place called “Hot Dougs” here in Chicago. They are famous for serving up all sorts of exotic “encased meats” as they call em. I tend to stay away from the rattler and gator, but I love me some bison!

About the original story: What a huge waste. Unbelievable.

Bison is definintely delicious. I cook at a restaurant that features it.

It’s hard to describe flavor but one customer described it as “like really fresh beef.”

Since we raise black Angus cattle, at home we fixed a couple of steaks of each for a taste test. It was close ... but I had to go with bison for flavor.
