Food Bank Pioneers Gluten-free Donations

LOVELAND, CO — As a mother of seven, Anne Miller already had a whopping grocery bill. When doctors recommended her teenage daughter go on a gluten-free diet, the family food bill went higher than Miller could afford.

So Miller was first in line this week when a food pantry in this northern Colorado city became the nation's first to promote gluten-free food for needy families with wheat allergies.

"Basically the whole family has to eat gluten-free now," said Miller, who walked out of the House of Neighborly Service food bank with a grocery cart full of gluten-free soups, pastas and pizza dough mix. "It becomes extremely, extremely expensive."

The food pantry, founded in 1961, opened its gluten-free food section after local activists with wheat allergies volunteered to pull it together. Activists say the food bank is the nation's first with a special program for people with celiac disease, a reaction to gluten in wheat or other grains.

Celiac sufferers say that although more gluten-free products are in grocery stores these days, they're so pricey that many with wheat allergies simply forego bread and stick to meat, fruits and vegetables.

I won’t bash you. I’m a celiac who understood what you meant. For folks like me, not an allergy. There are those on the diet for other reasons, among them children with autism. But I won’t “bash” you.

Frankly I restrict my use of baked goods to special situations ~ like a homemade fruitcake ~ hadn't had any in 5 years ~ it was fantastic. Betty Crocker has gluten free cake mixes.

A gluten free diet isn't a choice ~ it's what you do to deal with the fact that your body treats wheat gluten as if it were a poison or disease.

My diet has adjusted itself to be more like my Sa'ami ancestors ~ meat, fish, lingonberries. Anything beyond that is simply a luxury. And my cholesterol? LOW.

I’m curious. When you were growing up, were there anywhere near the number of picky eaters oops I mean “food allergies” among your acquaintences?

I never knew a single one. Not one! NO ONE in school had a “food allergy”.

Until maybe ten or fifteen years ago all this “food sensitivity” crap was unheard of.

Strange, don’t you think? How did society progress to this sorry point?

I notice in the excerpt above that “doctors” is plural. Wondering how many doctors met with her, and all of them recommending gluten-free diet!?

If she didn’t get multiple opinions, she gets no sympathy here. I’ve been there with misdiagnosis on this before myself. In my case it turned out to be stress, not wheat.

How did we get here? We made it the gubmints place to decide what you eat.

My friend has celiac and he can occasionally handle wheat but really
prefers to not have the complications.

A fair moral to this is "Donations" and not taxes. America are are generous
enough without the Gov doing it's distributing of our money.

I am sorry but this is a bit whackadoodle...Gluten free chicken broth:

Thanksgiving Stuffing (Gluten-Free)

5-6 cups cubed and dehydrated Food For Life Rice Almond Bread
2 Tbs. olive oil
3 cups chopped celery (or 1-2 Tbs. celery seed)
2 cups chopped onions
1 tsp. salt
1-2 tsp. cilantro
1-2 tsp. thyme
1-2 tsp. sage
black pepper
1-2 Cups gluten-free Chicken Broth

Prepare 1 to 2 cups gluten-free chicken broth. Prepare Food For Life Rice Almond Bread as follows: Cut into ½ cubes and put in food dehydrator for 8 hours (or put on cookie sheet and in oven on the lowest temperature for about 2-3 hours). Sauté chopped celery & onions in 2 TBS oil in large frying pan over medium heat until soft. Add spices & pepper as desired to taste. Pour in chicken broth & simmer over low heat for 15-20 min. Stir in bread until fully saturated in sauce & seasonings. Place in 400°F oven for 40-50 min, covering as needed with aluminum foil, until done. If you want to cook the stuffing inside the turkey add only 1 cup of Chicken broth.

WTF? the is no gluten in chicken broth! The recipe is for traditional chicken or turkey stuffing!

If you are allergic to bread.... dont ****ing eat bread!
But no.. they have to recreate the stuffing AND way blame toward chicken broth as well.

I'm doing low-carb and I can't remember the last time I ate anything that even resembles gluten.

Actually, you're making a very good observation. Many scientists are trying to figure out what's triggering the immune systems of people living in Western countries.

More and more are buying into the "Hygeine Hypothesis". It's thought that we're too clean. Our bodies are designed to deal with dirty water, parasites, unwashed hands, etc. We've filtered the water, dewormed the entire Western world and introduced antibacterial soaps into every home. Now our immune systems have nothing to chew on, so it turns on us (autoimmune diseases) and over-reacts to everything (allergies).

Many, *many* people in my family are being diagnosed with Celiac disease. What's weird is that nobody can remember anyone having problems before the 1980's. Then people in every generation of my family all started getting sick at the same time. Suddenly everybody started having problems with gluten.

Years later and we've got hypothyroidism, type one diabetes, alopecia, Chrones disease, autoimmune peripheral neuropathy and more.

I don't know if something changed with the wheat or if something changed us, but it didn't seem to matter *where* you were in the world, if you were in my family, you got sick after 1980.

Some people think that it's a new, undiscovered virus (or an old one that's mutated) that's actually spreading through the population like a disease. People with certain genetic make-ups are susceptible, others are resistant.

Some people suspect vaccines, but I'm leaning away from that theory.

Whatever's going on, something is wrong.

Please don't think that people with Celiac disease are "picky eaters". We're really not.

I have a 31 inch waist. (I'm almost 40. What do you want! lol!) I ate a Kit Kat two days ago. It didn't hit me the first night and I didn't even think about what I did. Yesterday I was throwing up most of the day. Today my belly started to swell and I'm sitting here with a very uncomfortable 38" waist dealing with "other" unpleasant symptoms.

My son nearly died when he was just over a year old from Celiac disease. He lost 1/3rd of his body weight and had massive malnutrition. After just two weeks on an elimination diet, he was thriving.

I used to think that people with food intolerances were just being big babies. Now I know and I wouldn't wish this on anyone.

As far as people taking care of themselves, I couldn't agree more. I have a store of GF noodles, a LOT of rice, potato flakes and peanut butter set aside for a rainy day. YOu don't *need* special GF foods to live healthy as a Celiac. Rice, potatoes and grits are perfectly acceptable "filler" foods for poor Celiacs. The GF noodles, breads and cookies are a nice break, but not necessary.

I agree! We can handle rice and potatoes just fine. Most can deal with grits.

Exactly. We have no kids (of the 15 Grandkids) that have any ‘food’ problem except from one that developed childhood diabetes; and he’s a skinny little runt, active in all kinds of sports, not one to sit around the house for two minutes.

My point of the article was that if we cater to every diet whim of the Hand-Out Hanks’ of this world, where does it end?

It doesn’t. People need to be more self-sufficient. You could plunk them down in front of a full freezer and pantry and they STILL couldn’t feed themselves.

And I totally agree; a LOT of these medical ‘conditions’ are by design. Heck, years ago when Hillary! was pimping her health care her GOAL was to ‘get the children, first.’

We’re seeing it today and the bleeding hearts out there are enabling this stupidity and it’s up to us ‘deniers’ to call them out on it.

My wife's tests for a wheat allergy, which included a biopsy, were inconclusive.

She still avoids wheat though.

How did you figure out its stress and how do you treat it?

Loooooooooooooooooooong story. Short version: I quit my very stressful job, and over a short period of time found myself capable of sleeping, eating, and other normally again.

It’s amazing what stress can do to ones body.
