Mardi Gras is Tuesday, March 4, and this year as part of our Fat Tuesday celebration, we asked recipe developer Raquel Pelzel to create a homemade version of MoonPies, a classic treat often tossed from the floats during parades in the Gulf Coast.
Although the MoonPie was born in Tennessee, its really a staple in the Gulf SouthMobile, Alabama, even drops an illuminated MoonPie for New Years Eve, so we thought who better than Pelzel, who worked with David Guas on his book, DamGoodSweet: Desserts to Satisfy Your Sweet Tooth, New Orleans Style, to help us create this recipe.

I think they look disgusting. Friends like them, one asked me to make them, but I don’t want to be in the same room with such excess.

As a kid I used to enjoy a moon pie with a Mr. Pibb at my uncle’s Phillips 66 superette on the Geneva Highway in Enterprise, Alabama. I haven’t had one in 40 years.
