Is this a residential neighborhood, and what does the deer smell like?
We had a similar case where someone cared for an injured bird which could no longer fly.
But because it was a ‘migratory’ bird, they were not permitted to keep it and Fish and Game seized it.
Then, because it was permanently injured and could not be released back into the wild, it was killed.
I thought that sort of stupidity existed only in my state; but evidently bureaucratic nonsense has spread elsewhere, too.
I don't know what the deer smells like, but have not seen any reports of any complaints from neighbors.
Molalla is a rural community. This family probably has several acres of land.
From what I saw on the news tonight, they are out in the country.

Go down to Bass Pro Shops and ask for deer scent.
Kind of smells like chicken.

I’m not saying how I know ... but keeping a deer does not involve smells. Even if they are kept in a pen, droppings are similar to larger rabbit poo-poo and dry very quickly.
as animals go very little odor droppings small pellets that make good fertilizer for garden.
Are you asking about deer meat, or a live deer?
A live deer stinks really really bad. Way worse than a wet dog that never gets bathed. You can smell a live deer from 15 feet away or more. They stink about like a domestic sheep, sorta.
Deer have an acute olfactory sense but they are almost stone deaf.
It depends on what sort of rub you use on it and how long you cook it. Seriously, I live in a subdivision, and we have deer, coyotes, possums, raccons, rabbits and other wild critters on a frequent basis, and none of them are nearly as obnoxious as the pet dogs and the "good neighbors" who bring them to drop their feces on my lawn.
